This will make about three full bowls of soup
Start heating up a pot large enough for your soup.
Take a leek and slice it in half length-wise.
Wash the halves under running water to get any dirt out.
Chop the leek into thin strips.
Put some oil in the now hot pan and throw in the chopped leek. Stir it around for a bit to coat everything with some oil to prevent burning.
Reduce heat to medium, medium-low.
Take three or four good sized potatoes, peel them and slice them into chunks.
Toss them around, then add 1L of water and a stock cube (or two if you want more flavour.)
Bring it to a soft boil and let it go for 20 minutes, or until the potatoes are done.
Once a knife can slide through one of the potato chunks like butter, put in your stick blender and blend everything into a smooth soup.
Put in a splash of cream to bring out the soft flavour of the potato.
Add salt and pepper to taste.
Serve with some fresh nutmeg and/or freshly ground pepper for a nice aroma.
Chili flakes and fried onions are also great to add, from my experience.
